Sebastien's Bistrot (Follow up)
The decor of the Bistro was rather French Countryside, feels really at home. Hence it's not a place with exhuberant decor which make you feel uncomfortable.
The entree was a simple and nice salmon salade. Large and thinly sliced, the smoke salmon is eaten with a mixture of fresh vegetables, like rockets..etc. Top with a little balsamic vinegar and a few little saltish fruit, which taste more like salted olives. It was a perfect mix. For a taste of real good salmon, you totally have to try this salade!
The main course which I've ordered is nice, simple catch of the day, with nicely home cooked tomatoe sauce and beans. The fish is fresh and simply pan fried in olive oil, which bring out its natural flavour. The beans are steamed and well cooked to perfection, eaten with home cooked tomatoe source.
Cappucino was great! Basically you can taste the true blue concentrated coffee i.e. espresso, mixed with a right percentage of fresh wipped cream. Yes, infact this is the correct way to brew a cup of coffee. In case you didn't know, all coffees, be it cafe long, cafe au lait, cappuccino, cafe americano... etc. are started from espresso. Yes, basically a good barista will have to learn how to make a nice, concentrated coffee, which extracts the goodness of the coffee bean, leaving out the bad taste. And from this base i.e. espresso, they will add other ingredient i.e. chocolate, whipped cream, milk; which will then make up the capuccino or the coffee americano that you've ordered.
Last but not least, the ever divine desert!!! Yes, going to any french restaurant, the desert is a MUST TRY! I've chosen the melon desert. It comes with a ball of house made melon sorbet (yet, it's made from fresh honey dew), a little sandwich of melon between two pie crust, and a little group of berries (rasberry) that serves as a decor as well as to blend in with the sweetness of this desert.
Conclusion: This is a nice cosy restaurant for french food that is made to suit local Singaporean taste. Alot of people say that french food is the "Jia buey bah" (cannot feel full), kind of dish, well you're totally wrong! It's a total myth!
